Identifikasi Kandungan Bahan Berbahaya Pangan Boraks dan Formalin dengan Metode Spektrofotometri UV-Vis

The purpose of this study was to determine the content and levels of borax and formalin in tofu circulating in the Bumiayu Main Market. Based on the results of the study, in the qualitative analysis of borax no borax content was detected, while in the qualitative analysis of formalin it was detected that it contained formaldehyde. Borax and formalin testing was continued with quantitative analysis. It was intended that if there was a qualitative error, the qualitative research did not show a color change, while quantitatively it contained low levels of borax and formalin. Quantitative analysis using UV-Vis spectrophotometry. Quantitative analysis was carried out by heating at a temperature 100°C for 5 minutes added with curcumin and sulfuric acid acetic acid (1:1) then measured at a wavelength of 546 nm. Formalin content was determined by adding chromatophoric acid reagent and then measured at a wavelength of 590 nm. The results showed 10 positive samples containing borax with levels of 1.21% to 2.47% and 3 samples containing formalin with levels of 0.006% to 0.022%.
